You will need: 1 x Nonna’s Muffin Mix 1 Egg or equivalent substitute Milk (approximately ¾ cup) or dairy substitute 375 ml (1 ½ cups) grated strong cheddar cheese (optional) Method: 1. Beat egg lightly in a measuring cup, top up with milk to 250ml mark. 2. Sift dry ingredients, stir in grated cheese, add the egg/milk mixture. Mix lightly. 3. Spoon into well greased muffin pan to ¾ full (makes 10). 4. Bake at 220°C for 12-15 minutes. Variations: Add 4 tablespoons either fried bacon bits, chives, olives or sun-dried tomatoes to the mixture just before placing it into the muffin pan.
