| You will need: |
| 1 x Nonna’s Pancake Mix |
| 1 extra large egg or equivalent substitute |
| 1 cup milk or dairy substitute |
| 1/2 cup water |
| 2 tablespoons melted margarine |
| Method: |
| Whisk egg, water & milk. Add sifted dry ingredients and stir in melted margarine. Fry thin pancakes in oiled pan till golden. Sprinkle with cinnamon & sugar. |
| The mixture can be kept in fridge and diluted with a little water for later use. Freezes well between layers of greaseproof paper. |
| Variation: Crumpet mix: Follow the method as above but instead use 1/2 cup of milk and 1/4 cup of water in the mixture. |
